Ingredients
- 1 (16-ounce) package Potato Gnocchi
- 1 pound sweet Italian sausage
- 1 tablespoon chopped garlic
- 1 onion, diced
- 2 cups spinach, chopped
- 2 cups of slice mushrooms
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ cup Grated Parmesan Cheese

Prepare the gnocchi according to package instructions.
Meanwhile, brown the sausage in a large skillet over medium-high heat. Break into smaller pieces with a wooden spoon. Remove the sausage and set aside. Add the garlic, onion and mushrooms. Sauté until soft, about 6-7 minutes.
Add in the chopped sausage and sauté for 2-3 minutes. Add the gnocchi, salt and pepper and toss.
Transfer to a large serving bowl and sprinkle with Parmesan.
